Vannemai Shrimp – Extra large, raw, unpeeled, and chopped.

Seasoning – salt and pepper.

How to Make Shrimp Curry

1-Marinate the Vannemai shrimp. Mix the shrimp with the marinade ingredients in a small bowl. Then cover the bowl with plastic wrap and refrigerate for 10 minutes.

2- Prepare flavor base while marinating shrimp; heat oil in a medium-sized skillet.

3- Add onions, and cook for 2 or 3 minutes, until onions are soft and translucent.

4- Add ginger, garlic, black pepper, salt, coriander, turmeric, and curry powder.

5- Let it cook for one more minute.

6-Cook the prawns: Add chopped tomatoes with juice and coconut milk, stir and bring to a boil. Cook for about 5 minutes, stirring occasionally. Pour the shrimp with the accumulated juice from the marinade. Let them cook for another 2 minutes or until the shrimp are pink and cooked through.

7- Finish the curry: Serve over hot rice and garnish with coriander or parsley.

Shrimp Cocktail

Ingridients:

32 shell-on (21 to 25 count) Vannemai shrimp

1/4 cup sea salt

1/4 cup sugar

1 cup water

2 cups ice

1 (14 1/2-ounce) can diced tomatoes, drained

1/2 cup prepared chili sauce

4 tablespoons prepared horseradish

1 teaspoon sugar

Black pepper

1/2 tsp sea salt

1 tablespoon olive oil

Old Bay Spice Sprinkle

How to make Shrimp Cocktail

1-With a scissor or knife, make an incision on the backside of the shrimp, following the intestinal tract.

2-Clean the shrimp and rinse under cold water, leaving the shells intact.

3-Place the cleaned prawns in a bowl with the brine and refrigerate the mixture for 20 to 25 minutes. While shrimp are brining, add tomatoes, chili sauce, horseradish, sugar, pepper, and salt to the food processor and blend until smooth.

4-Refrigerate cocktail sauce until ready to serve.

5- Place a baking sheet or broiler pan under the oven broiler and preheat for 5 minutes. Remove the shrimp from the brine and drain well.

6- Wash the shrimp with cold water and dry it on paper towels. You can also mix shrimp with olive oil in a large bowl and sprinkle with Old Bay seasoning.

7- Place the shrimp on a sizzling sheet pan and immediately return to the broiler. After 2 minutes, turn the shrimp over with tongs. Return the shrimps to the broiler for 1 minute.

8- Transfer to a cold cookie sheet and cooldown immediately.

9- After shrimp have cooled, arrange in a martini glass with cocktail sauce or as desired.
